Khubani ka meetha (or qubani ka meetha) is a traditional Hyderabadi dessert made from dried apricots. Khubani or Qubani or Khobani is Urdu for apricot. Remember to soak apricot’s in water overnight.

Summer! As this season arrives, we start getting peaches, apricots and berries in the market. Especially apricots, as they mature early than all other fruits. These fresh apricots have a slight hint of tanginess in them along with their light yellowish-orangish colour and musky flavour. The fruit which is native to Armenia and its region is known for producing and using apricots since antiquity.

Acres and Hectares are filled from these dried apricots in Turkey. These Turkish apricots travelled to India all the way from the majestic Himalaya’s around 400 years ago. The transporters of this fruit were on the verge of establishing a new dynasty in a foreign land. However, we all know well the history of our “Mughal” rulers, their rise and fall. However, apricots stayed here and became a part of our diet.

Khubani ka meetha (or qubani ka meetha) is a traditional Hyderabadi apricot dessert made from dried apricots. And this royal dessert also happens to be extremely easy to make. Note, Khubani or qubani ka meetha is Urdu for apricot sweet. Remember to soak apricot’s in water overnight.

Above all, Khubani ka Meetha is served in every Muslim marriage and other functions and is available at most of the restaurants in Hyderabad.

Traditionally, Hyderabad qubani ka meetha recipe is served with sweet cream or with thick custard.

Hyderabad Khubani ka Meetha

Ingredients

  • (Soaked) Dried Apricots (खुबानी): 200 gm (Unseeded or with seeds)
  • Sugar : 1/2 Cup (125 gm) + 1/2 Cup (125 gm)
  • Water: 500 ml (added in batches)
  • Almonds (बादाम) (Thinly sliced): 30 gm
  • Custard Powder (Vanilla) : 3 Tablespoon.
  • Full Cream Milk: 500 ml + 50 ml
  • Broken Cashew Nuts (काजू): 50 gm
  • Whipped Cream or Milk Cream to garnish.

Method

  1. Soak apricots overnight.
  2. Add soaked apricots into a pan, sugar and mix it. Add water. We’ll use a total of 500 ml of water in batches.
  3. Indeed, start crushing the apricots with a spatula.
  4. On medium flame, use a potato masher to completely mash the apricots until it reaches a jam-like consistency.
  5. Add sliced Almonds and mix.
  6. Turn off the gas and let it cool. After some time refrigerate it.
  7. Mix 3 tablespoons of Vanilla Custard powder in 50 ml of milk. Keep this aside.
  8. In a saucepan, boil 500 ml of milk. Combine sugar and mix until dissolved. At the end add broken cashew nuts and mix until they get softened.
  9. Now add the custard milk we prepared earlier and mix. However, keep stirring until the milk thickens. You can check the consistency by wiping some milk off the laddle. It should come off clean.
  10. Turn off the gas and let it cool. Refrigerate it.
  11. Assemble the first layer of apricot jam and then pour the custard over it.
  12. Add sliced almonds on top.
  13. Top it off with some whipped cream or milk cream and garnish it with some chopped apricots.

Serve it chilled.
